In typical Van Morrison fashion "Jelly Roll" is either a reference to Jelly Roll Morton (many of Van's songs have references to blues/rock'n'roll/jazz musicians) or the meaning of female genitalia or plain sex. Take your pick. Now, where did Jelly Roll Morton get his nickname from ? ;-)
I always assumed he was referring to Jelly Roll Morton, one of the first jazz pianists in New Orleans, especially because of the prominence of piano in the song. Jelly Roll's nickname probably had a sexual connotation, as noted in your comment.

The one live concert I saw him play he was completely disconnected from the audience and delivered an emotionless performance. At one point he asked the audience for a song request, at which point there was an unintelligible response from several in the audience. Almost immediately he heard (or maybe pretended to hear) the title of the song he wanted to sing next and launched into it without delay as if he had a bus to catch after the show and didn't want to any waste time.
